One rotisserie chicken, picked and diced
1 teaspoon freshly ground cumin
3 ribs celery
1/2 cup mayonaise (I use Best Foods Light)
1 tablespooon dijon mustard
salt and pepper to taste
Mix all ingredients. Spread on bread. Top with another piece of bread and eat!
If you ask me, this is much better with a vidalia onion diced up and included but
David doesn't like raw onions, so I add it to my sandwich only.
